Dutch Oven Pizza

Makes 1 pizza

2 packages of pizza crust mix

28 oz of spaghetti sauce

3 cups of shredded mozzarella (add more if you like lots of cheese)

1 package of pepperoni (for a pepperoni pizza)

1 pound of hamburger (for a hamburger pizza)

1 box of heavy duty foil

1 package of flour

And any other type of toppings you like

First line the Dutch Oven with heavy-duty foil (this helps reduce clean up)

Mix pizza crust according to instructions on the package

Prepare topping. Example: cook the hamburger

Spread a layer of flour over the foil

Now place crust mix in the Dutch Oven

Spread out the crust with your fingers. (Make sure to put flour on your fingers first)

Now spread the spaghetti sauce over the crust mix

Place your toppings on the spaghetti sauce

Put cheese evenly over the toppings

Bacon Cheese Wrapped Hot dogs

2 packages of Hot Dogs

1 pack of 24 slices of Cheese

1pound of Bacon

1 box of toothpicks

1 box of Tin Foil

2 packs of Hot Dog buns

 Serves: 8 people

First cut each hot dog lengthwise; don’t cut through the hot dog or the ends. (This keeps the cheese from falling out.)

Second roll the cheese so that it will fit in the cut you just made and stuff it inside.

Third wrap a piece of bacon around the hot dog. Attach the bacon to each end of the hot dog with toothpicks.

Fourth loosely wrap tin foil around the hot dog.

Fifth set on grill and cook until the bacon and the hot dog have cooked all the way. This will approximately take around 5 minutes. (Note: the cooking time will vary with the heat of the fire.) Submitted by Kyle C. Troop 8

 

Pot Roast

4 lb. Chuck or round roast

Eight medium onions, sliced

Eight potatoes, sliced

Eight carrots, sliced

Cooking oil

Salt and pepper

Preheat oven and lid and place on coals. Rub flour on the roast and brown all sides inn a small amount of oil in the oven. Add ½ inch of water. Put the lid on the pot and cover with a layer of coals. Simmer 3 to 4 hours. Check occasionally and add water if necessary. After about 2 hours, add the vegetables. Replace the lid and continue simmering until everything is tender.

Serves eight to 10.

Oven Fried Chicken

Use half of a frying chicken per person. Wash chicken in water. Cut away skin and fat. Discard. Cut the chicken into pieces, dip into cold water, and wipe dry. Shake the chicken pieces in a paper bag with seasoned flour (flour, salt, pepper.)

Preheat the Dutch oven. When it is hot, add two tablespoons of cooking oil and the chicken pieces. Brown them on both sides.

Put the lid on the oven and add coals on top. Bake, basting the chicken occasionally, for 15 minutes. Then turn the pieces over and cook until tender-about 15 minutes. Then turn the pieces over and cook until tender about 15 minutes

ALL AMERICAN SANDWICHES

1 pkg cheddar cheese sauce 1 cup milk 1/4 cups mayo 2 tbs mustard 1/2 lb deli turkey, diced 1/2 lb deli ham, diced 1/4 cups chopped walnuts 1 green pepper, diced 8 deli rolls, split Sliced tomato sliced onion

Prepare cheese sauce as package directions with milk. Stir in rest of ingredients. Let cool and chill in cooler. Spread on rolls when chilled with tomato and onion slices.

FEEL THE HEAT CHILI

1 tbs oregano 2 tbs paprika 9 tbs chili powder 4 tbs cumin 4 tbs instant beef bouillon 2 cans non-alcohol beer 2 cups water 4 lb ground chuck 2 lb hot pork sausage 1 lb chuck roast, cubed 2 large onions, chopped 10 cloves garlic, minced 1 tbs crushed dried habenero peppers 1 tbs sugar 1 tsp coriander 1 tbs Louisiana Red Hot Sauce 1/4 cups jalapenos, sliced 1 cup tomato sauce 2 large cans hot chili beans with gravy 1/2 cups olive oil salt to taste

THIS RECIPE WILL FEED A WHOLE TROOP

In a #14 Dutch oven, add paprika, oregano, cumin, chili powder, beef bouillon, n/a beer, and 2 cups water. Let simmer. In a large skillet, heat olive oil and brown meat in batches until all meat is done. Add each batch to Dutch oven with slotted spoon and stir after each batch. Sauté onion, garlic, and jalapenos in drippings until onion is clear. Add to Dutch oven and stir. Simmer 2 hours. Add rest of ingredients and simmer 1 hour. Add water as necessary.

Dutch Oven Lasagna

1-1/2 lb. lean ground beef
23 oz spaghetti sauce
9 oz shredded mozzarella cheese
3 eggs
2-1/4 c cottage or ricotta cheese
1/4 cup grated Parmesan cheese
13 lasagna noodles
1-1/2 tsp. oregano
3/4 c hot water

Preheat the Dutch oven. Brown the ground beef. When done remove the beef to a large mixing bowl. Add the spaghetti sauce to the beef and mix well. In another bowl, add the cottage or ricotta cheese, Parmesan cheese, mozzarella cheese (reserve a few ounces for later), eggs, and oregano, and mix well.

Place the layers in the oven in the following order: Break up four lasagna noodles into the bottom of the oven. Spread about 1/3 of the meat mixture over the noodles. Spread 1/2 of the cheese mixture over the meat mixture. Break up five noodles and place over the top of the preceding mixtures. Spread 1/2 of the remaining meat mixture over the noodles. Spread the remaining cheese mixture over the meat mixture. Break up the remaining noodles and place over the cheese mixture. Spread the remaining meat mixture over the noodles. Pour the hot water all around the edges of the oven. Place the lid on the oven and bake one hour or until done. Check frequently.

Hints: This recipe works well with charcoal (12 briquettes on bottom and 12 on top). Cooking time can be reduced by pre-cooking and draining the lasagna noodles.

Barbecue Ribs

Use a 14 in. regular or deep Dutch Oven.

1/2 Rack of spare ribs
Salt and Pepper ribs according to taste
Braise in a hot Dutch Oven for 30 to 40 minutes at approx. 450 degrees
Cover lid completely with coals, same with bottom
Check for browning, turn if necessary
Separate ribs and cover with your favorite barbecue sauce
Bake for approx. 2 hours with 14 coals on top and bottom.

Ingredients Eggs and Oranges

Instructions 1.Cut and orange in half
2.Hollow out a section, so it forms a shell
3.Crack an egg into a shell
4.Place on fire until done and enjoy

Ingredients 1 good sized fish or a couple small ones, whichever you were able to catch.
Lemon Pepper or other favorite seasonings
Butter

Equipment Tin Foil

Instructions Clean your fish
Place on tinfoil'
Add butter inside and out of fish
put your seasoning in the fish
fold foil so as to keep juices and stuff inside.
Place in fire for about 15-20 minutes. be sure to cook both sides. Fish comes out flaky, you know you did it right.

Ingredients 6 soft rolls
vanilla frosting
sugar
shredded coconut alot
Whipped cream

Instructions Take the rolls and spread frosting on each one using the knife.Sprinkle the shredded coconut and sugar on the rolls . squirt on the whipped cream and leave them out overnight on the tray .

Crab Alfredo

Ingredients: 1 pkg Lipton’s Noodles and Sauce dinner, Cheese Alfredo flavor. 1 small can of

Crab meat.

Preparation: Prepare noodles according to the directions on the package. Open can of crab meat.

Add to pot. Stir until heated.

 

Scotch Eggs (makes 2)

Ingrediants: 1 eggs,

Equipment: knife, tray

Instructions: Wrap meat around the whole egg, be sure that the meat covers the whole egg and that you can’t see the egg through the meat. (That means that there won’t be enough meat on that side.) Put it on the tray and wait for the meat to cook. When the meat’s been cooked to a safe level, cut it down the center and enjoy. (Even better with barbicue sauce)

Cowboy Stew

2-3 lbs. of ground beef

1 tbsp. Butter

Two 15-oz cans chili beans

Brown beef in butter in open oven. Add beans and cook slowly 15 minutes in covered oven. Serves 8.

Options: Add chopped onions.

Dutch Oven Easy Baked Lasagna

This is just like the easy recipe for home, only baked in a Dutch oven! Ingredients fit into one large Pyrex casserole dish & placed in a 12 inch Dutch oven. To shorten bake time, two ovens may be used if smaller casserole dishes are available. May also be placed directly in the Dutch oven if no casserole dishes are available. Feeds 6 - 8. Our scout cooks liked this one!

Ingredients:
1 box (9) Lasagna noodles(thin), uncooked
Sauce Mixture (mixed in large resealable plastic bag)
1 lb. ground beef, pre-cooked and drained
1 28 oz jar of spaghetti sauce
1 14.5 oz can of tomato sauce
Cheese Mixture
2 eggs
1 cup parmesan cheese
1 carton cottage cheese
1 lb. mozzarella, grated or cut into strips.

Construction Details:
Combine ingredients for each layer. Build lasagna in this order:
1/3 sauce mixture
layer of noodles (noodles may be broken to fill uncovered areas)
1/2 cheese mixture
1/3 sauce mixture
layer of noodles
1/2 cheese mixture
1/3 sauce mixture

Bake 1 1/2 hours at 350 deg. F.
